Super Healthy Caramel Nut Bars

Looking for a healthy homemade snack to satisfy the post 8pm chocolate cravings. Look no further! Head straight to your kitchen and have a go at making a stash of ‘Caramel Nut Bars’. These little bars of deliciousness are similar to the famous snickers bar but this recipe is made with super healthy ingredients and tastes really, really good. A fantastic healthy, vegan, gluten and diary free snack bar packed full of goodness. Did we mention, it's refined sugar free too!A fun and easy to make recipe. These Caramel Nut Bars are perfect to make with the children on a rainy day. They are an absolute favourite in our house and a brilliant afternoon snack for little ones too. Beware, they wont last long!Check out our steps and tips on making your own healthy snickers or as we call it in our house; ’The Caramel Nut Bar.’Step 1; The Base.Inspired by; thehappypear.ieHomemade Healthy Snickers - Base 1. Mix all the above ingredients together in a large bowl.2. Line a baking tin with foil or greaseproof paper.3. Push the base ingredients into the baking tin and flatten until it is about 1.5cm deep.4. Place in the freezer for approx 15 minutes or until quite firm to touch. Step 2; The Caramel.Healthy Homemade Caramel
  1. Place all the above ingredients in a food processor and blitz until combined. We used peanut butter in our recipe.
Step 3; Layering.Healthy Homemade Snickers
  1. Remove the base ingredients from the freezer.
  2. Cut into pieces - you choose how small or big you’d like them to be!
  3. Add the Caramel to the top of each bar.
  4. See Topping Ingredients below - Scatter the chopped almonds on top of the caramel.
  5. Return to the freezer for approx 15 mins to firm a little.
  Step 4; The Topping.Healthy Homemade Snickers
  1. Break your chocolate into pieces and place into a heatproof bowl.
  2. Place bowl over a pan of barely simmering water (Bain Marie) and wait for the chocolate to melt. Stir occasionally.
  3. Once melted, remove bars from the freezer.
  4. Using a palette knife, rest the bar on the end of the palette knife and spoon chocolate over the bar.
  5. Continue process until all bars are covered with chocolate.
  6. Return to the freezer to harden.
  7. Enjoy
Author Notes;I like to freeze the bars so they remain firm, they soon soften once removed from the freezer. They’ll last a few weeks individually wrapped in the freezer, or up to a week in an airtight container in the fridge….or maybe you’ll love them so much they wont last two minutes!!Banana Caramel Bars;Why not replace the base with slices of banana, a delicious, healthy and cheaper alternative. If you decide to use bananas you must keep the portions, wrapped and frozen until ready to eat.
