Tips On How To Create A Succulent, Steamed Roast Turkey.

Christmas is just round the corner and this year we’re planning to cook our turkey in a steam oven. Cooking with steam locks in flavour and moisture and we all know creating a roast turkey that is beautifully succulent and perfectly cooked can be quite a challenge.

Many steam ovens available on the market are compact in size and therefore have a slightly smaller capacity than a standard oven. It is possible to fit up to a 7kg turkey into a compact steam oven which, for most family gatherings, is sufficient as it will feed roughly 10 people with leftovers. If using turkey crown a 2-2.5kg crown will feed 6-8 people.

Turkey crown is a great choice for those who enjoy the white meat only. With a turkey crown the breast of the bird remains attached to the bone with the legs and wings removed. A crown is a great option if you are cooking for smaller numbers or for those who do not wish to deal with all the extra bits! Turkey crowns also cook quicker than a full roast turkey and are the ideal size for a compact steam oven!

Due to turkey having a low fat content there is always the risk of turkey meat becoming dry. The risk of cooking a turkey that is dry is minimal when steam cooking the bird however, many experts recommend covering the turkey in a dry brine marinade overnight or for a few hours prior to cooking. The turkey will absorb extra moisture during the marinating time, which will help it stay moist and juicy both during and after cooking, plus the marinade flavours the turkey a little too.

Tips For Cooking A Deliciously, Moist Christmas Turkey!

  • Allow the bird to rest for about 30 minutes prior to carving and cover loosly with foil. During the resting period it will continue to cook through.  It will be much easier to carve once well rested.
  • Buy a free range or organic turkey as the meats tends to be more flavoursome.
  • Buy a fresh turkey and allow the turkey to reach room temperature prior to cooking. Remove from the fridge an hour before you plan to cook.
  • Check the meat is cooked thoroughly. Ideally use a thermometer or meat probe, the internal temperature should reach 70°C. Alternatively pierce the skin in the thickest part and check the juices run clear.
  • Cook with steam and conventional air to ensure the meat stays tender and juicy with a crispy outer skin.
  • Smear the turkey skin with a little butter. Rub in salt and pepper then allow to marinate for up to 4 hours or overnight. Cover the turkey crown with streaky bacon before placing in the oven.
