With less thank a week to go until the big day it means we’re ready to add the finishing touches to our Perfectly Fruity Christmas Cake. Here we bring you a step by step guide on how to add the icing layer to your Christmas cake plus a few tips and ideas for decorating your cake.
This is the exciting part as you can be as creative as you wish. Maybe a simple, traditional design is your style or perhaps a Christmas winter wonderland full of sparkle is more up your street. I guess the main thing here is that our cake creations taste amazing, I’ve been wanting to try a slice since baking it back in October, at least now I don’t have much longer to wait!! Grab your Christmas Aprons, pop on the festive tunes and get creative.
Lay a piece of string over the cake to measure the size of the icing required. If you plan to ice the whole cake make sure the string goes over the sides too. Keep the measured string to one side, you’ll need this when you start to roll the marzipan.
Glaze the marzipan with a little water all over. This ensures the icing sticks to the marzipan.
Lightly dust a work surface with icing sugar and kneed the icing until soft and pliable. Form a round mound then begin to roll the icing to a 4-5mm thickness, turning it frequently so it does not stick to the surface.
Take your piece of string and lay it over the icing to ensure the icing is wide enough to cover the cake. Gently fold the icing over your rolling pin and place over the marzipan.
Gently smooth the icing on the top of the cake and ease the sides down with the palm of your hand. The icing will be pliable, ease it over the sides then push around the base firmly before trimming any excess away with a sharp knife. Smooth with a smoother tool (or palm of hand)
Decorate! This could take anything from 5 minutes to hours dependant on how creative you want to be!
Here are a few bits you may want to use to help decorate your Christmas cake;
- Ribbon; Using a festive ribbon around the base of the cake is a quick fix for any untidy finishes close to the base. Even if your finish is immaculate, ribbon still adds a lovely finishing touch.
- A selection of Christmas cutters; Holly leaves, snowflakes, Christmas trees, Santa, stars, reindeer cutters etc. Using Christmas cutters will speed this up, they allow you to create a quick and effective decorative finish.
- Piping bag & nozzles; To create more intricate designs use a piping bag with a narrow tip nozzle. Make sure the icing mixture isn’t too runny.
- Fondant stencils; Simply roll icing over a patterned surface to create an elegant finish to your creation.
- Edible glitters and shimmers; Stock up on edible glitters and shimmers to create a sparkling finish to your masterpiece! Perfect for a winter wonderland scene or snow topped Christmas trees.
- Cake boards; Pop the cake on a cake board and if you have time, icing the cake board creates a professional finish and looks great. If you use a thicker cake board add the finishing touch by placing ribbon around the edge of the cake board.
- Edible glue; You’ll need this to stick any fondant decorations to the cake, alternatively you can use icing.
- Moulding tools and rotary cutters; Ideal if you plan to make your own fondant toppers.
