Quick, easy herb & lemon asparagus with Parmesan

English asparagus is in abundance in spring and early summer. Not only is it delicious at this time of year, but versatile and great value.  Using a microwave to cook it is quick and easy and you don’t lose nutrients into the cooking water.Serve this as a starter with some grilled crispy Parma ham or as an accompaniment to barbecued meat or fish.Preparation:  5 minutesCook:              5 minutesServes:           4 as an accompaniment I bunch English asparagus25g butter, softenedFinely grated zest 1 lemon1 tbsp fresh rosemary, finely chopped1 tbsp flat leaf parsley, finely chopped (or use any fresh herbs that you have)Salt and pepperParmesan shavings to serve 
  1. Wash the asparagus and remove any woody ends by bending each spear to snap off the tough ends. It will break at the point where the asparagus becomes woody.
  2. Place the prepared spears in a shallow microwavable dish.
  3. Mash the butter with the lemon zest, herbs and seasoning. Dot over the asparagus and cover with cling film.
  4. Place in the microwave and cook on high for 2 ½ minutes (for 1000 watt microwave). Remove and baste the asparagus with the melted butter and replace in the oven. Cover and cook again for another 1 ½ - 2minutes until tender.
  5. Serve with the Parmesan shavings and lots of freshly ground black pepper.
