Simple things are often the best things; enjoying a well baked homemade shortbread with a cup of tea is one of my favourite things. Shortbread should melt in the mouth, in order to acheive the best results it is important to use a really good-quality unsalted butter for flavour and you must not overwork the mixture as this will make the dough oily and develop the gluten in the flour which will make the shortbread tough.
