To all of you who think salads are boring; think again! We have created our own gem salad with homemade ranch dressing and delicious rustic croutons. The saltiness of the bacon and sweetness of the piccolo tomatoes and grapes combined with the creamy ranch dressing make a perfect combination. We love the crunchy croutons and walnuts too, they add texture to the dish. Less preparation means less time having to clean up afterwards and more time to relax!Give our delicious 'Gem Salad with Ranch Dressing and Homemade Croutons' a try, its simple to make and tasty too.Step 1; MIX - Make the ranch dressing, preferably a few hours prior to serving to allow the flavours of the herbs to infuse.AH Ranch Dressing.Preparation Time; 10 minutesMakes enough dressing for the salad recipe plus a large side dip.Ranch Dressing Ingredients              Our own buttermilk recipe; 60ml (1/4 cup) milk and 65g (1/4 Cup) Fage greek yogurt.Method;In a kilner jar mix all the ingredients together. Refrigerate for at least 1 hour before serving. Can be kept in the fridge for 3 days in an airtight container. Be mindful; the shelf life of your milk and yoghurt will effect the length of storage for the dressing.Author Note; Makes a brilliant savoury dip for all the family. Serve with plenty of chunky slices of colourful veg and breadsticks. We love the Crosta And Mollica torines breadsticks.Step 2; TEAR. Prep the croutonsPreparation Time; 5 Mins Cooking Time; 10-12 minsHomemade Croutons.Rustic Homemade croutonsIngredients;100g rustic bread loaf (Preferably slightly stale)Sea SaltCracked Black PepperGood Lug Extra Virgin Olive OilFew leaves of fresh parsley - chopped finely (you could try different herbs to suit your taste)Method;1. Preheat oven to 175ºC.2. Tear bread into rough pieces or cut into 3/4 inch cubes.3. In a large bowl toss bread cubes with enough extra virgin olive oil to lightly coat. Mix in sea salt, black pepper and herbs to taste.4. Place evenly on a baking tray and bake in the oven for 5 minutes, shake/turn and bake for a further five minutes or until golden.5. Homemade croutons can be stored in an airtight container for up to 10 days, unrefrigerated.   Author Note; Bit of a sweet tooth? Why not try making a sweet crouton which would be great served on top of fresh fruit and yoghurt for breakfast. Try tossing in coconut oil, dust with cinnamon sugar, cardamon, ginger, vanilla or nutmeg. Be experimental!Step 3; CHOP. Create the salad.Gem Salad.Preparation time; 10 minutesCooking Time; 6-7 minutesServes 2 as main or 3-4 as a side.Gem Salad Ingredients Method;1. Chop all the fruit and vegetables as above and roughly tear the leaves of the gem heart lettuce.2. Add all the ingredients to a large bowl but place half of the raisins or sultanas and chopped walnuts to one side.3. Place the dry cured bacon under a medium grill and cook for 6 minutes or until slightly crispy.4. Once cooked, remove any excess fat on the bacon with kitchen roll. Roughly chop into bite size pieces. Add to the salad mix.5. Add 3-4 tablespoons (Or more if required) of the homemade AH Ranch Dressing to the salad and gently mix to coat evenly.6. Scatter the remaining walnut pieces, raisins or sultanas and homemade croutons on top and serve immediately.7. Serve with extra croutons and ranch dressing on the side. Gem Salad with ranch dressing and homemade croutons Authors Note; More of a savoury palette? Eliminate the raisins and apple and add some chunks of mozzarella or feta and a few slices of ripe avocado. It’s a great swap!Step 4; Serve and enjoy….why not serve with a chilled glass of white wine.
