Caribbean Smokey Chipotle Pork with Banana Salsa, Rice and Beans Recipe.

  • 400g pork lion (Approx 4 steaks)
  • 1 1/2 tbsp Chipotle paste
  • 1 tsp Cumin
  • 1 tsp Smoked paprika
  • 1/2 tsp Jerk seasoning
  • 1 tsp Light brown sugar
  • 1 tsp Vegetable oil
Rice And Beans…
  • 150g Basmati rice
  • 1 x 400g Tin Kidney beans - Drained & rinsed
Banana Salsa…
  • 2 Medium bananas
  • 1 Large avocado (Choose one that is just perfectly ripe)
  • 1 Small red onion, finely chopped
  • Large handful coriander, roughly chopped
  • 1 Lime - juice only
  • 1 Lemon - juice only
  • 1 Red chilli - deseeded and finely diced
Method;
  1. Heat oven to 160℃ fan.
  2. Mix chipotle paste, cumin, smoked paprika, jerk seasoning and brown sugar together with the oil.
  3. Smear the seasoning onto both sides of the pork loin. Leave to infuse for a couple of hours if you have time.
  4. Bake in the oven for 20 mins until tender & cooked throughly.
  5. Whilst the pork is cooking prepare the rice and salsa.
  6. Rinse and cook the rice following pack instructions being mindful that the beans will be added to the pan 2 minutes before the end of cooking.
  7. Whilst the rice is cooking prepare the banana salsa.
  8. Finely dice the red onion and chop the avocado and banana into small chunks and place in a large bowl. Mix in the lemon and lime juice, red chilli, coriander stalks and leaves plus a little ground black pepper and salt to taste.
  9. 2 Minutes before the rice is fully cooked add the rinsed beans to the pan (make sure you’ve rinsed the beans well before adding). Cook for 2 minutes and drain before serving.
  10. Slice the pork into strips and serve into warm bowls alongside the rice and beans and fruity banana salsa.
